 Macaroni Grill's Smothered Chocolate Cake
 
 
3½ cups    mayonnaise  
3½ cups    brewed coffee  
½ oz    vanilla  
1¾ lbs    cake flour  
1/8 cup    baking soda  
6 oz    cocoa powder  
1½ lbs    granulated sugar  
 
1 Preheat oven to 350°F.
2 Sift flour, baking soda, cocoa powder and sugar so there are no lumps and texture is smooth.
3 Make sure that brewed coffee is at room temp and not warm. This will prevent a reaction with the baking soda. Mix ingredients, but do not over mix.
4 Use a toothpick to check doneness. It's cooked when it comes out clean.
5 Frosting is a Ganache Frosting; the ingredients are heavy cream and semisweet cocoa or use any good Ganache Frosting recipe.
6 As far as the presentation of the cake, drizzle frosting on the plate, place the square of cake on the frosting and top with a mint leaf.
